JOB SUMMARY

Reporting to the Executive Chef, the Stewarding Manager will assist in the functional aspects of the food service and production facility and will be responsible for managing multiple BOH food areas which include but are not limited to: Conference Kitchen, production kitchen, the main dishwasher area, and the adjacent ballroom hallway. This position will mainly direct the flow of clean and dirty items to the right location at the right time. Keeping all equipment in working order and managing the process to minimalize breakage and working in an efficient fashion.

Now, if you were to come on board as our Stewarding Manager, we’d ask you to do the following:

  • Conduct daily stewarding briefings and participates in weekly culinary team meetings
  • Promotes working collaboration and teamwork with all teams and departments 
  • Manage the phased opening of this new build and the roll out of the stewarding programs 
  • Manage the duties of all stewarding department employees, facilities, operation and costs
  • Manage the sanitation, cleanliness, hygiene as well as the quality level of product and services
  • Work with all departments to ensure items that are required for service are available when needed
  • Take all necessary actions to reduce the loss of silverware / flatware and glassware
  • Enforces proper use and cleaning of all dish room machinery
  • Ensures all food holding (HACCP) and transport equipment is in working order
  • Ensures compliance with food handling and sanitation standards
  • Keep all Back of House (BOH) areas clean and clear of hazards due to volumes and schedules
  • Ability to work well under pressure in a fast paced environment
  • Co-ordinate with FOH team to understand turn around timing and ensure items are available when required
  • Conducts and supervises the training and development of the personnel within the Stewarding department
  • Empowers employees to provide excellent customer service by establishing guidelines so employees understand expectations and parameters
  • Trains Stewarding team in standard operating procedures, safe food handling, equipment operation, food safety, and positive team procedures
  • Possesses a strong ability to work with other likeminded managers in a shared working environment
  • Schedule stewards according to business level requirements
  • Manage the hiring process and performance to ensure sufficient full time and part time associates
  • Encourages and builds mutual trust, respect, and cooperation among team members.
  • Serves as a role model for the stewarding teams to demonstrate appropriate behaviours.
  • Ensuring all Compass Group Canada Health and Safety guidelines and training is completed and updated as mandated
  • Complies with Federal, Provincial and Municipal sanitization regulations and departmental procedures as evidenced through local health departments and third party
