The Role
We have a fantastic opportunity for someone to join us in the position of Bank sous chef in Bromley. Your responsibilities will include:
- To display exceptional leadership by providing a positive motivational work environment, supporting
and communicating with employees as appropriate and demonstrating a professional approach to management.
- To oversee and provide direction for all day-to-day operations in the kitchen in the absence of the
Head Chef To support the Head Chef in Providing guidance and direction to the kitchen brigade, including setting performance standards and monitoring performance.
- To schedule and co-ordinate the work of the kitchen brigade to ensure that food presentation is technically correct, and of outstanding food quality.
- To support the Head Chef in working within pre- determined budgets ensuring operational needs and objectives are met.
- To ensure all food costs and labour are managed within the catering budget
- To facilitate chargeable services i.e. Birthday parties, end of life gatherings
- To work in conjunction with the Head Chef in implementing all food production, and the implementation of rotational menus, taking into account the differing needs and requirements of residents with regard to special diets, pureed or soft diets etc.
- Interact with residents and use customer feedback, satisfaction survey results and the monthly Food and Beverage meeting to drive forward service.
- Actively handle residents problems or complaints
- To work in conjunction with the Head Chef in developing and continuously improve the Food and Beverage/Fine Dining Experience for our residents.
- Improve service by providing guidance to the brigade in understanding resident’s individual dietary needs and give feedback, and individual coaching when needed.
What you will need to succeed
We are looking for someone who believes in working together as part of a team, who shares our values and who is positive and friendly. The successful candidate will:
- Experience of working as a sous Chef within a luxury environment
- Knowledge of catering for the elderly and the important of nutrition and fortified diets where appropriate.
- City and Guilds Diplomas in Professional Cookery or BTEC HND in professional Cookery or equivalent
- Stocktaking, product ordering and accountability
- COSHH ‘Control of Substances Hazardous to Health’ trained and HASSAP aware
- Working knowledge of H&S legislation
- Demonstrate good communications skills at all levels
