TOMA’s kitchen provides Victorian sourced produce, married with a beverage list that will be ever changing. The sun rises in TOMA’s conservatory, with breakfast- Small batch coffee by Cottles and in-house smoked salmon with crème fraiche.

Our all day Food & Beverage Menu invites you to drop in at any time to see the bay and city skyline, with a locally sourced beer or wine in hand.

The Role:

This is an incredible opportunity to be a part of Melbourne’s newest five star hotel, just recently opened in December 2021, and the only Hyatt Centric in Australia. Melbourne CBD is back, after a long 18 months of closed in-door dining, we are excited to launch a new space in the heart of the CBD.

We are looking for an enthusiastic Restaurant Manager who will dazzle our guests with their genuine passion for all things food and beverage. As the Restaurant Manager, you will be responsible for running the restaurant team on the floor according to the established standards of Hyatt whilst also ensuring a high level of customer service for all guests.

What will your typical workday look like?

  • Provide great leadership to a diverse team
  • Create and communicate the rosters and delegation of tasks and responsibilities
  • Conduct monthly inventory checks on all operating equipment and supplies
  • Recruitment of new associates within the department with the guidance and support of the Human Resources team in the absence of the Restaurant Manager
  • Controlling manning levels of the Restaurant in relation to occupancy, requirements, service quality and costs
  • Provide training and onboarding support for new staff within the department
  • Handle guest enquires in a courteous and efficient manner
  • Ensure all employees deliver the brand promise and provide exceptional guest service at all times
  • Liaising with all necessary departments to ensure the productivity of the outlet is successful in its daily operations

About you:

  • A true foodie! You’ll know the latest Melbournian food trends
  • Previous management or supervisory experience in a similar role or fast-paced environment
  • A valid and current RSA certificate
  • Excellent people management and communication skills
  • You love to promote ideas and make sound decisions under pressure
  • A strong attention to detail and the desire to provide guests with a positive and genuine experience
  • Flexibility to work on a rotating roster, including weekends and public holidays
